I never liked to eat squishy black or over ripened bananas, and the best way to use them is to make Easy banana bread.
It’s an easy recipe, you just dump all the ingredients in one or two bowls and mix with hand using a wooden spoon and bake, your done!
1 and 1/2 cup of self raising flour
1 cup of sugar [half brown + half white –optional]
3 over ripened bananas mashed with a fork
¼ cup melted butter
1 tsp baking powder
1 lime [juice]
1 tsp salt
½ tsp vanilla essence
½ tsp cinnamon powder
¼ tsp baking soda
7-8 pecan or walnut halves to top
1] Preheat oven to 350°F (175°C), and line a pan [4X8 inch] with butter and dust with flour.
2] Mix all the wet ingredients in on mixing bowl and mix well.
3] In another mixing bowl mix all the dry ingredients well.
4] Then mix all the ingredients together, Dry ingredients to the wet ones, and mix well using a wooden spoon.
5] Pour the mixture in the lined tin and place the pecan or walnut halves randomly on top.
6] Place it in the center of the oven and bake it for 1 hour and 15 minutes or until done.
7] Check with a knife or a tooth pick the center, after 1 hour, if it comes out clean the loaf is done if not bake for some time more until done.
8] Remove and cool on a wire rack. Slice and serve with hot beverage or with ice-cream.
